Almost all the She Wolf breads contain some portion of natural leaven (or sourdough culture). Every day, a portion of the levain is reserved and used to build the levain for the next day's breads.
Natural leavens and the long fermentation times that they require result in an almost entirely different product than breads raised with commercial yeast. In essence, the yeast and companion bacteria have time to pre-digest the flour, making available a variety of B vitamins and minerals, enhancing flavor and assisting digestion. The acidity resulting from fermentation offers naturally leavened breads their signature sourness and acts as a natural preservative.
Classic Batard + PUllman
This is an entirely naturally leavened bread, with no commercial yeast. It has a pliant, slightly sour crumb and a crispy crust. Ingredients: Organic white flour, water, Farmer Ground organic whole spelt flour, natural leaven, sea salt.
MICHe and toasted sesame wheat
Only Farmer Ground Half-white and whole wheat flours are used to make this traditional French bread. It is raised by a stiff levain rather than the liquid levain used in the other sourdough breads. The large size of the loaves contribute to their keeping quality but necessitate a long bake which results in a dark crust. For the Toasted Sesame, we add 20% of the flour weight in organic, un-hulled sesame seeds to the dough creating an intensely flavorful crumb and crust. This German style rye is densely packed with whole grains and sprouted rye berries. Naturally leavened, we add a small amount of malted barley syrup to balance out the dough’s acidity giving this bread a deep, grassy sweetness and exceptional keeping quality. POLENTA BOULE & PULLMAN
A toasted polenta “mash” is incorporated into this blended wheat dough, creating breads with a robust sweet-corn flavor, gentle crunch, and medium-open crumb.Ingredients: Organic white flour, Farmer Ground organic Half-White flour, water, natural leaven, Farmer Ground organic coarse corn polenta, Farmer Ground organic cornmeal, sea salt.
Maple and oat Boule
An off-white sour, this dough is among our wettest, creating loaves with an exceptional open and chewy crumb. Toasted steel-cut oats and organic maple syrup round out the flavor, creating loaves with delicate texture, mild sweetness, and a slightly tart finish. Flour (Organic white flour, Farmer Ground organic Half-White flour, Farmer Ground organic whole spelt flour), water, organic steel-cut oats, natural leaven, organic maple syrup, sea salt.
This bread uses both natural levain and a small amount of commercial yeast. There is as a significant percentage of Farmer Ground's "Half-White" bread flour. With this high extraction flour the bran is removed during the milling process, but the flavorful and nutritious germ of the wheat is retained. This gives the interior a slight brownish-gray color compared to a conventional baguette. Ingredients: Organic white flour, Farmer Ground Half-White organic flour, natural leaven, sea salt, yeast.
More than 90% whole grain, this gently mixed, high hydration dough is spongy, earthy, and complex. This bread uses both natural levain and a small amount of commercial yeast. It is brushed with olive oil and sprinkled with salt before being stretched out, flattened, and baked directly on the hearth.
