Our Breads

When our bakery began, sourcing local grain was difficult. Sourcing it at volume was virtually impossible. Still, we were committed to using as many local ingredients as were available to us and as our bread production scaled, the output from NYS grain growers and other regional millers has grown too. These days, we use over 150,000 lbs of NYS grain & butter each year, plus a plethora of produce, honey and other items that we source from our fellow Greenmarket vendors.

Almost all She Wolf Bread contains some portion of natural levain (also known as sourdough culture). Every day, a portion of the levain is reserved and used to build the levain for the next day's bread.

Natural leavens (and the long fermentation times that they require) result in an almost entirely different product than breads raised with commercial yeast. In essence, the yeast and companion bacteria have time to pre-digest the flour, making available a variety of B vitamins and minerals, enhancing flavor, and assisting digestion. The acidity resulting from fermentation offers naturally-leavened breads their signature sourness and acts as a natural preservative.

CLASSIC PULLMAN

Entirely naturally leavened bread, with no commercial yeast. It has a pliant, slightly sour crumb and a crispy crust.

Ingredients: organic wheat flour, water, organic bread flour (organic wheat flour, organic malted barley flour), organic whole spelt flour, sea salt

MICHE

The large size of the loaves contributes to their keeping quality but necessitates a long bake, which results in a dark crust.

TOASTED SESAME WHEAT

TOASTED SESAME WHEAT

This flavorful loaf starts out as the same dough as our miche, but we load it full of toasted sesame seeds and then coat the loaf as well to bring out all of its savory, umami goodness.

Multi Grain Pullman

MULTI-GRAIN PULLMAN

More than 90% whole grain, this gently mixed, high hydration dough is spongy, earthy, and complex.

Ingredients: water, organic whole wheat flour, organic high extraction wheat flour, organic millet, organic steel cut oats, organic flaxseed, organic polenta, sea salt 

Polenta Pullman

Polenta Pullman

A toasted polenta “mash” is incorporated into this blended wheat dough, creating loaves with a robust sweet-corn flavor, gentle crunch, and excellent keeping quality.

Ingredients: water, organic high extraction wheat flour, organic wheat flour, organic bread flour (organic wheat flour, organic malted barley flour), organic polenta, organic cornmeal, sea salt


SPROUTED RYE

SPROUTED RYE

Naturally leavened, this German-style rye is densely packed with whole grains and contains malted barley syrup, giving this bread a deep, grassy sweetness.

Ingredients: water, organic whole rye flour, organic sprouted rye berries, organic high extraction wheat flour, organic sunflower seeds, organic flaxseed, organic millet, barley malt syrup, sea salt


Baguette

BAGUETTE

This bread uses both natural levain and a small amount of commercial yeast. Farmer Ground’s “Half-White” flour is a high extraction flour in which the bran is removed during the milling process, but the flavorful and nutritious germ of the wheat is retained.

SUNFLOWER MILLET BISCOTTI

This crunchy snack is a little bit sweet, a little bit salty. It's packed full of whole local grains with pops of millet and toasted sunflower seeds. 

Ingredients: organic sugar, NYS all purpose flour, NYS spelt flour, egg whites, extra virgin olive oil, millet, sunflower seeds, vanilla extract, baking powder, sea salt

DAYCAKE

A lightly-sweetened snacking cake with rotating produce and organic flour. We adjust the ingredients regularly in order to source from what’s available at the greenmarket, so please ask the market vendor for the most updated list.

Please note that this cake does contain eggs and may contain butter or milk. Daycakes are now available at all of our weekly markets!
